Swordfish Caesar Salad

Ingredients :
4 x 250g Swordfish steaks
4 small heads of Romaine lettuce
30g freshly grated Parmesan

Dressing :
1 large garlic clove
10ml olive oil
4ml fresh lemon juice
90ml sour cream
30ml Worcestershire sauce
2 teaspoons Dijon mustard
2 teaspoons anchovy paste
salt and freshly ground black pepper

Method :
For the dressing, mince the garlic in a blender or processor. 
Add all remaining dressing ingredients and blend well. 
Prepare barbecue grill to a high heat or preheat grill pan.
Brush 1 tablespoon dressing over one side of each steak.
Season with salt and pepper. 
Grill fish seasoned side down for 3 minutes each side,
depending on thickness, turning once.
Transfer to plate

To Serve :
Place lettuce in large bowl, mix in remaining dressing, grated
Parmesan and ground pepper. 
Divide salad among plates.
Place each swordfish steak on top of salad.
Sprinkle 2 tablespoons Parmesan and pepper over each salad.

Serve immediately.
